This morning I felt like an omelette. I looked in my fridge and saw I had leftover grilled asparagus from last nights meal. I decided to get creative, and came up with this tasty, healthy meal!
Healthy, Tasty Egg White Omelette
Serves 1
Calories-120 calories as written
Fat- 1.7 grams
Carbohydrates- 8.2 grams
Protein-19.4 grams
6 small Asparagus Spears (grilled with just a small spray of cooking spray)
2 pieces sun-dried tomatoes (NO-OIL kind)
1/4 cup diced button mushrooms
2 large egg (whites only)
1/4 cup shredded FAT FREE cheddar cheese
Cooking Spray
Salt and Pepper as desired
Dice up asparagus, tomatoes, and mushrooms. Lightly spray pan with cooking spray and add diced vegetables. Heat vegetable through. Separate egg white from yolk and and discard yolk. Whisk egg white until frothy. Pour into hot skillet. Once egg has turned white, add cheese and vegetables. Finish cooking, and fold over to create omelet.

In a quest to keep my focus on my 2 week pre-op diet, I am experimenting with foods with lots of taste to compensate for small portions, and limited foods. Here is a yummy recipe I came up with last night for dinner! It was delicious and even the family loved it!
Caribbean Mahi Mahi
Serves 1

Fat- 1 gram
Carbohydrates- 7 grams
1- 4 oz Mahi Mahi fillet
1 slice of pineapple-middle removed
Mrs. Dash Carribean Citrus seasoning
Mrs. Dash Fiesta Lime seasoning
Meyer Lemon (cross between a lemon and mandarin orange) You can also use lemon or lime
Directions:
Sprinkle mahi mahi fillet with spices and squeeze a Meyer Lemon over top. Place in broiler or indoor grill. Take fresh pineapple and following the directions, slice off top, bottom and peel. Slice pineapple into slices about 1/2 inch thick. Cut out hard inside to create a ring. Spray indoor grill-(I used stove-top grill) with non-stick cooking spray. Place pineapple ring onto grill, sprinkle lightly with carribean citrus seasoning, and squeeze a little Meyer Lemon juice over it. Grill until it has brown grill marks in it, then turn over to grill the other side. Once done, place on plate, and put cooked mahi mahi fillet on top of grilled pineapple ring.
This was delicious served with grilled asparagus spears and grilled yellow squash sliced long ways and fanned out on plate to make a very nice fest for the eyes!

Applebees Paradise Chicken Salad - Re-created
The other day I went to eat at Applebees for lunch with some friends. After perusing the menu for healthy options, I found a delish looking salad that I thought I would recreate for my readers.
Salad
3 oz Chicken Breast
1 tsp Mrs. Dash Caribbean Citrus seasoning
2 cups Crisp Lettuce (romaine is best)
1/2 cup Red Cabbage (shredded)
1/2 Apple (cut in chunks)
1/2 cup Mandarin Oranges (canned in juice/drained)
1/4 cup Pineapple (fresh tastes best)
2 T Light Balsamic Vinaigrette
Pico de Gallo
1/2 White Onion
6 Roma Tomatoes
1-2 Jalapeno (diced)
1/2 cup Cilantro
2 TB Lime Juice
Step 1: Make Pico de gallo by chopping the ingredients and mixing together, add salt to taste.
Step 2: Sprinkle Mrs. Dash onto the chicken breast and grill on indoor grill.
Step 3: Prepare salad by placing lettuce on plate, add cabbage, toss slightly then top with remaining ingredients and pico de gallo.
Step 4: Remove cooked chicken from grill and put on plate to rest a few minutes. Slice into strips and place on top of salad.
Serve with Kraft light balsamic vinaigrette, or other preferred light vinaigrette.
