The other day I went to eat
at Applebees for lunch with some friends. After perusing the menu for healthy options, I found a delish looking salad that I thought I would recreate for my readers. APPLEBEES PARADISE CHICKEN SALAD (My Version) Salad 3 oz Chicken Breast 1 tsp Mrs. Dash Caribbean Citrus seasoning 2 cups Crisp Lettuce (romaine is best) 1/2 cup Red Cabbage (shredded) 1/2 Apple (cut in chunks) 1/2 cup Mandarin Oranges (canned in juice/drained) 1/4 cup Pineapple (fresh tastes best) 2 T Light Balsamic Vinaigrette Pico de Gallo 1/2 White Onion 6 Roma Tomatoes 1-2 Jalapeno (diced) 1/2 cup Cilantro 2 TB Lime Juice Step 1: Make Pico de gallo by chopping the ingredients and mixing together, add salt to taste. Step 2: Sprinkle Mrs. Dash onto the chicken breast and grill on indoor grill. Step 3: Prepare salad by placing lettuce on plate, add cabbage, toss slightly then top with remaining ingredients and pico de gallo. Step 4: Remove cooked chicken from grill and put on plate to rest a few minutes. Slice into strips and place on top of salad. Serve with Kraft light balsamic vinaigrette, or other preferred light balsamic vinaigrette. Calories: 285 with dressing I have often heard people talk about "hiding behind their fat".
This statement is lost to the lucky ones who have never been fat. But those who battle weight like myself, get it! I understand it! I live it! Being fat is much more than an exterior symptom. As fat begins to take over, mold and disfigure my body, it CHANGES me internally as well. As the appearance changes, numbers climb and clothes cease to fit; my mental self becomes SKEWED, DISTORTED and starts to put up a protective WALL. My mind begins to say, "hey you...no one likes you! No want will hire you. No one will think you are talented, attractive or want to be around you!" It tells me "you CAN'T, you will fail, so why try?" It pokes and prods me with every thought, negating every positive aspect of myself.
